Basic Options
Many people assume that GAIJIN have three basic job options in Japan: 1) teaching, 2) Corporate positions, and 3) Factory jobs. But that's really not the case. There are GAIJIN here doing everything from construction to arbitrage.
Your Niche
So, where's your niche? You don't necessarily have to choose one profession and stick to it for your entire Japan experience. In fact, most long-termers go through several jobs and industries in Japan before figuring out what suits their needs.
Common Job Alternatives
GAIJIN bars
Foreigners can be waiters/waitresses, bouncers, managers, owners or just plain happy customers the GAIJIN bars found just about everywhere in Japan.
Restaurants
GAIJIN are not limited to GAIJIN bars. Japan has some of the best international cuisine in the world, and these restaurants are often owned/run by foreigners.
Entertainment
Bar staff, "companions", performing artists, etc.
Construction
There is a growing market for "western style" houses that are imported from abroad. Most (if not all) of these construction materials are shipped in to the country, and GAIJIN entrepreneurs are often seen running the entire operation.
Modeling
As a matter of fact, you don't necessarily need to be good looking to be a model in Japan...

Switching Jobs
Although switching jobs/industries is quite conceivable in Japan, it could cause problems for you the next time you go to renew your visa. For instance, there are several different classifications under the Working Visa. The terms granted for visa extension also depend on the industry, ranging from just 6 months to 3 years or more.
